Recipe: Crispy Potato Skins

Ingredients:

·         2 medium russet potatoes

·         1 tablespoon minced fresh rosemary

·         Butter-flavored cooking spray

·         1/8 teaspoon freshly ground black pepper

Directions:

·         The first step would be to preheat the oven at the temperature of 375 F.

·         Then wash the potatoes thoroughly and slice with a fork. Keep the potatoes in the oven and bake for one hour or till the skins become crunchy.

·         With extreme caution, slice the potatoes in half and take out the pulp. Do not forget to leave at least 1/8 inch of the flesh of the potato attached to the skin.

·         Then spray butter-flavored cooking spray inside each potato. Add pepper and rosemary to them. Bake the skins in the oven for 5 to 10 minutes. Serve hot.
