The interplay of diabetes and diet control cannot fool the patients of this disease virtually. Food if measured in right quantity and content can modify the traditional belief of a cookie free life of diabetics. Cookies when prepared with the adequate quantity of sugar free or white sugar with limited scope for starch deposition can satiate the sweetened buds of diabetics. The two preparations explained in this section are appropriate for the patients of diabetes:

Chocolate chip cookies: This preparation is included in the section out of the recent research in the efficacy of dark chocolate in the control of diabetes by the release of anti-diabetes chemical, Flavanols.Ingredients required for the preparation of this type of cookie:

  • 1 cup low-fat soft butter or margarine
  • Granulated white sugar, sugar can be substituted with the tablets or powder of sugar free
  • One egg
  • 1 teaspoon vanilla extract
  • 3 tablespoons Hershey’s cocoa or Hershey’s European style cocoa is essentially required
  • Baking powder (half tablespoon is more then enough)
  • Salt should be added depending on the taste
  • Skimmed milk, merely two tablespoons
  • Wheat flour
  • Hershey’s mini chips, with sugar low calorie chocolate, one third cup.

Method of preparation: Oven should be heated at 375F. Sugar and butter should be blended in a bowl. Than add vanilla extract and egg to stir it properly. Mix the above mentioned quantities of flour, cocoa, baking powder into the mixture. Stir with drops of milk and butter. Add chocolate chips and pour drops of this mixture onto ungreased cookie sheet. The cookies should be baked for 7 to 9 minutes. Serve when cool.

Almond sugar cookies: This is prepared with almonds which aid in the reduction of diabetes. Almond when extracted of its juice is the apt food item for diabetes control and maintenance.

Requirements: This is prepared with the aid of 75g margarine, 18g sugar free, egg white extracted from one egg, almond extract, pinch of baking soda and almond slices.

Method of preparation:

  • Oven should be heated at 350 F.
  • Margarine and sugar should be stirred in a bowl to make it fluffy and creamy.
  • White egg and almond extract should be added. Stir. A paste is formed.
  • Flour, baking soda, and cream of tartar should be mixed in the bowl.
  • Half inch sized balls should be made out of the paste and should be placed on a non-stick.
  • This should be baked for 8 to 10 minutes.
